There isnโ€™t a ton of complicated cooking that goes into this oneโ€ฆ Simply add cooked, shredded chicken and potato gnocchi to a creamy broth, some carrots, celery, fresh spinach in a super savory, creamy broth. Itโ€™s definitely a crowd pleaser. The potato gnocchi add a soft, pillowy component to the soup and make it extra filling. Essentially youโ€™ll be recreating a popular restaurant soupโ€ฆ Only there will be NO waiting for this one.

  • 4 tablespoons butter
  • 1 onion diced
  • 2 carrots shredded
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups half and half
  • 1 pound potato gnocchi
  • 2 cups cooked shredded chicken
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 2 cups fresh spinach

Method
 

  1. Melt butter. Cook onion, carrots, and celery 5 minutes. Add garlic.

  • Grated Parmesan for serving

Method
 

  1. Heat oil. Cook onion, carrots, and celery 5 minutes.
  2. Add zucchini and garlic. Cook 2 minutes.
  3. Add tomatoes, broth, kidney beans, green beans, and seasonings. Simmer 15 minutes.
  4. Add pasta. Cook 10 minutes.
  5. Stir in spinach.
  6. Top with Parmesan and a drizzle of olive oil.

Clam chowder is always a popular item on the menu in coastal townsโ€ฆ It may look intimidating but itโ€™s easier to make then you think! Shorten your cook time by using canned clams but rest assured that the broth will be no short lacking in that clammy flavor. Serve steaming hotโ€ฆ Either ladle the chowder into a bread bowl or top with oyster crackers!

  • 1 onion diced

  • 3 cans chopped clams juice reserved
  • 8 ounces clam juice
  • 1 1/2 pounds potatoes diced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 1/2 cups heavy cream
  • 1 cup whole milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Oyster crackers for serving

Method
 

  1. Cook bacon until crisp. Remove, leaving drippings.
  2. Cook onion and celery 5 minutes. Add garlic.
  3. Stir in flour. Cook 1 minute.
  4. Whisk in reserved clam juice and bottled clam juice. Add potatoes, thyme, and bay leaf.
  5. Simmer 15 minutes until potatoes are tender.
  6. Stir in clams, cream, milk, salt, and pepper. Heat through without boiling.
  7. Remove bay leaf. Top with bacon and crackers.

One of our favorite Olive Garden recipes, this Tuscan-inspired soup is absolutely delicious! The spicy italian sausage and perfectly cooked, sliced potatoes are swimming in a garlicky, creamy broth with fresh kale and crispy bacon sprinkled on top. The potatoes make this dish filling and the kale cuts through some of the ingredients and adds some color and freshness. This copycat Olive Garden recipe comes together in about 40 minutes and would be perfect served with some crusty bread or breadsticks!

  • 1 pound hot Italian sausage
  • 4 slices bacon chopped

  • 1 cup heavy cream
  • 3 cups chopped kale

Method
 

  1. Brown sausage. Remove.
  2. Cook bacon until crisp. Remove.
  3. Cook onion in drippings 4 minutes. Add garlic.
  4. Add broth, potatoes, and red pepper flakes. Simmer 15 minutes.
  5. Stir in sausage, cream, kale, and salt. Cook 5 minutes.
  6. Top with bacon.

  • 1 bay leaf
  • 8 slices baguette toasted
  • 2 cups shredded Gruyรจre cheese

Method
 

  1. Melt butter. Add onions, salt, and sugar.
  2. Cook 45 to 60 minutes, stirring often, until deep golden.
  3. Add garlic. Cook 1 minute.
  4. Add wine. Scrape up browned bits.
  5. Add broth, thyme, and bay leaf. Simmer 20 minutes.
  6. Remove thyme and bay leaf.
  7. Ladle into oven-safe bowls. Top with bread and cheese.
