The coconut is a tropical fruit; its flesh and milk are used in various recipes, and people have adored them for generations.
They made their way to the western world in the 1500s, then nearly four hundred years later, bakers in America got their hands on the dried, sugary flakes. Voila, the coconut cream pie was born.

My Memaw had the best chocolate meringue pie recipe ever!
2 deep dish pie shells. Do not precook
In large mixing bowl separate 4 eggs- put whites in a bowl of its own to make the meringue later
Beat the 4 egg yolks with 2 c sugar while you melt a stick of real butter and let cool
Add 2 c APFlour alternating with a can of evaporated milk measured in 2 c mixing cup add enough regular milk so all milk equals 2 c
Beat well then fold in 1/2 c cocoa powder and cooled melted butter plus 4tsp pure vanilla. Beat with mixer until smooth then bake 2 deep dish pies on 350×50-65 minutes
When pies almost ready add 2 more egg whites to the 4 you have from separating them for pies. Start beater on 3 or 4 speed. Sprinkle one tbsp of sugar per 2 eggs so 3 tbsp total splash of vanilla if you like. Increase speed and add 1 tbsp cold water. Now beat until soft to firm peaks form to your liking. When pies come out increase temp to 425 and put half of meringue on each pie swirling and making peaks to your desired. Seal the edges so no chocolate showing. 8-12 minutes in oven and they’ll be done. Watch closely. Remove early if necessary.
