Method

Filling
  1. Add potatoes, onion, celery, and garlic to the slow cooker.
  2. Lay chicken on top. Sprinkle with poultry seasoning, thyme, salt, and pepper.
  3. Whisk soup and broth together. Pour over chicken.
  4. Cover and cook on low 8 hours or high 6 hours, until the potatoes are fork tender.
  5. Remove chicken and shred with two forks.
  6. Stir in cream cheese and heavy cream until melted.
  7. Whisk cornstarch and cold water. Stir into the slow cooker.
  8. Add chicken and frozen vegetables. Cover and cook on high 30 minutes until thick.
Biscuits
  1. Bake biscuits according to package directions.
  2. Mix melted butter and garlic powder. Brush over hot biscuits.
To Serve
  1. Ladle filling into bowls and top each with a biscuit. Sprinkle with parsley.

Notes

  • Don't add the frozen veggies early or they turn mushy.
  • Make sure the potatoes are fork tender before you shred the chicken. If they're still firm, give it more time.
  • Leftover filling keeps 4 days in the fridge. Store biscuits separately so they don't get soggy.
