They are located at the Sun Market on Friday afternoons and the City Park Farmer’s Market on Saturdays. The menu is seasonal and constantly changing, but you can get a variety of hearty meals and sweet baked goods here. All of their food is locally sourced and appropriate for the season.

I highly recommend ordering the risotto with artichoke and broccolini or the mushroom rigatoni. Add a sweet slice of tiramisu and an espresso for an utterly spectacular dining experience. They also serve an exclusive Sunday Supper. Guests are served a 5-course meal family-style and enjoy a signature cocktail for a fixed price. Reservations are recommended for this meal but are otherwise not necessary.

Each dish is thoughtfully cooked and plated, from their Banh Mi Breakfast Tacos to the Sunflower Risotto. Vital Root also serves smoothies, CBD juices, and a small selection of cocktails, beer, and wine. Select items can be enjoyed for a steal during their Tuesday through Friday night happy hour.

The Cubano sandwich made with jackfruit and seitan-ham rocked my world. Although the food here is incredible, it’s the atmosphere that shines. Guests feel transported to a tropical island in the middle of downtown Denver. The vibe is casual and the people are friendly and accommodating.
